02 · The Story

It all starts in the pilón.

A pilón is the wooden mortar in every Colombian kitchen — where plantains get pounded into patacones, where spices get ground fresh, where a meal actually begins. Naming the business after it wasn't branding strategy. It's just true: nothing here is shortcut.

Two food carts, a production kitchen, and one family. El Pilón is a labor of love, and it shows in every arepa, empanada, and natural juice that comes out of it.

Handmade, not polished

Made in our kitchen, cooked at the cart when you order. Nothing sits under a lamp waiting for you.

Colombia is the point

Recipes from the coast and the interior, cooked the way they're cooked back home.

Say it plain

The menu says what the food is. The sign says when we're open. No filler words, ever.
