A pilón is the wooden mortar in every Colombian kitchen — where plantains get pounded into patacones, where spices get ground fresh, where a meal actually begins. Naming the business after it wasn't branding strategy. It's just true: nothing here is shortcut.
Two food carts, a production kitchen, and one family. El Pilón is a labor of love, and it shows in every arepa, empanada, and natural juice that comes out of it.
